Kalamata Olives - Certified Organic Raw, Unpasteurised, Unsalted olives from Kalamata We apologies but this item is currently out of stock and wont be available again until next seasons olives are ready in March. For the first time in the UK and exclusively at The Raw Greek you can now find Kalamata olives which have not been cured in salt water. Unlike all other Kalamata olives these olives do not all have a uniform taste, some are slightly bitter and others slightly sweet giving the taste buds a pleasant surprise each time. All standard Kalamata olives are picked from the tree in late December/January, our rare Kalamata Olives from the Peloponese of Greece have been allowed to ripen on the tree as long as possible and are left to naturally ripen on the tree and in the natural sunlight until March. They are then picked and cured in frequent changes of pure mountain spring water for 15 days to remove some of the bitter taste. Instead of adding vinegar to preserve the olives when packaged these Kalamata olives are stored in a little extra virgin olive oil made from the same delicious olives and vacuum packed for lower postage costs. Kalamata olives are my favourite olives, I was overjoyed when I discovered them and have not stopped eating them ever since.
